Effectively direct the actual food production and the minute-by-minute supervision of the catering staff.
Participate in menu planning, costing and ordering.
Effectively manage inventory, ordering, sanitation, and hourly associate management to include oversight, coaching and development.
Maintain an environment that creates excitement for employees and retain a highly skilled work force by promoting professional growth, coaching, and training of a synergetic team.
Ensure team and guest safety at all times and maintain the highest quality standards in food preparation and presentation while practicing food safety procedures according to policy and health/sanitation regulations.
Degree in Culinary Arts or equivalent professional experience
is preferred.
Related experience in upscale food service operations is required.
Know and have ability to prepare stocks, soups, mother sauces, all varieties of meat including veal, pork, beef, lamb, poultry, game and seafood.
Know food and industry trends with a focus on quality, production, sanitation, food cost controls, and presentation.
Be able to set up and distribute production sheets and have proficient computer skills to include Microsoft Office programs, e-mail and the Internet.
Possess supervisory, leadership, training, management, coaching and communication skills both written and verbal.
Have demonstrated organizational skills, budgeting experience and understanding of financials.
Know proper food handling methods, cleanliness procedures, and state and local health/sanitation guidelines.
Be able to bend, lift and carry up to 40 lbs. and stand for prolonged periods of time.
Be groomed and dressed appropriately to deliver our brand experience.
Work with schedules based around busy meal times, holidays, events and weekends.
